Smoked Pollack is very versatile and perfect for warming chowders, or used to make kedgeree, or in fish curries, fish pies and in hearty fish stews.

For a quick, light lunch or supper dish, poach the smoked pollack in a little milk with a bay leaf and some black peppercorns until it flakes apart easily and keep warm. Discard the milk. Meanwhile make some green beans or spinach and top with a poached or fried egg. Filling and soothing.
