Redfish, sometimes known as red snapper, has a mild flavour and a medium-firm texture.
The fillets can be grilled, steamed, baked or pan-fried for a quick and easy meal. A good inexpensive substitute for cod.
Pan-fried: heat some oil in the pan until hot, season the fillets with salt and pepper and fry on each side for 3-4 minutes. Popular with children.
Baked: sprinkle 2 or 4 fillets with a little cayenne pepper and season with salt. Put the fillets in an oven proof dish, brush with oil and put on the bottom rack of the oven at 180C for about 25 minutes or until the flesh flakes with a fork.
Meanwhile, in a small bowl, mix a handful of chopped parsley or coriander and a clove of chopped garlic in a bowl with 100ml of olive oil and season with salt and pepper.
Transfer the fillets to a large serving dish and drizzle the parsley garlic mixture over them and serve with lemon wedges. Good with mashed potato to mop up the juices and a simple salad.
