The herring is an oily fish, full of flavour and a great staple, rich in essential omega-3 fatty acids, protein and vitamins, which help promote good health.
Herrings are usually sold whole with or without the head and tail cut off and cleaned (the bones are usually soft and edible). They can also be bought boned and filleted and are cooked in moments. Whole herrings can be poached, pan-fried or grilled, or pickled, soused, marinated, salted and smoked.
Poached herring: bring water, a squeeze of lime juice, a dash of cider vinegar, 5-6 peppercorns, 2 bay leaves and a little salt to a slow boil in a pan. Turn down the heat to a gentle simmer, add the fish and poach for about 12 minutes, or until cooked through.
Make a potato salad by mixing 100ml of mayonnaise with a tablespoon of Dijon mustard, black pepper and a little salt then mix in small boiled potatoes cut in half and scatter with chopped parsley.
To grill: set the grill on high or preheat a grill pan. In a large bowl, gently toss the herring in generous splash of olive oil, add chopped coriander, a pinch of sea salt and a pinch of chilli powder. Grill the fish over moderately high heat, turning once, until just opaque, about 2 minutes per side. Bread and a small salad are all you need with this.
